There's lots of things I want to do, there are also a lot of things I have to do. These have-to lists include going to work, laundry, and maintaining sanity conditions for my family. The want-to lists include cooking, organizing, traveling, writing, reading, well it's endless, and I'm sure there's lots of people out there who know what I'm talking about.
Today I was whipping up tacos for dinner, easy enough, but hubby doesn't eat meat or dairy, so I use vegetable protein. Eww, right? well when you season it with taco seasoning, it's actually not bad, and I kinda like it. That's the real challenge in this house, I'm not a vegetarian, and I don't want to be, but the hubby and kid are. Kid, not 100%, but I can count how many bites of burgers and steaks she's had in her whole life before the inevitable gag... so I tend to just serve them both vegetarian and fish options, while I constantly strive to find things to satisfy the constant cry for meat screaming from my inner foodie. It's a challenge I accept, it's fun to me to try and create meals that satisfy me and the family.
Back to my vegetable protein, I used Bob's red mill version. I love Bob's red mill. They make everything, and you can rest assured it's from a good source. I would die of happiness if they somehow opened a store here.

So what is my overall goal here? I want to express the things I do everyday, and not in the pinterest way, not in the facebook way, I want to do it as it really happens, no sugar coating, no perfect pictures. I'm a working mother, who wants to do it all, and I can, but in my own way and in my own time.
